- Prepare the Filling
- Peel and cut the potatoes into small cubes, then boil them in salted water until tender. Drain and mash them slightly with a fork.
- Finely chop the onion and sauté it in a pan with olive oil until translucent.
- Add the minced meat, cumin, paprika, salt, and pepper. Cook while stirring until the meat is fully cooked.
- Remove from heat, then add parsley and mashed potatoes. Mix well and let it cool.
- Finally, add the grated cheese and mix one last time.
- Shape the Rolls
- Place a spring roll sheet (brick pastry sheet) on a clean work surface.
- Put a spoonful of filling at the bottom of the sheet, fold the sides inward, then roll it tightly to form a roll.
- Brush the edge with a little beaten egg to seal it well. Repeat with the remaining sheets.
