Hazelnut samsa

Here is a recipe for Hazelnut Samsa. These are traditional Tunisian sweets often consumed during festive occasions. They are made with brick sheets and filled with various sweet ingredients.

For the filling:

  • 7 Samsa Elgamra sheets
  • 200 g of ground hazelnuts
  • 80 g of powdered sugar
  • 1 tablespoon of orange blossom water
  • 1 egg white (for binding)

For finishing:

  • Oil for frying
  • Sesame seeds (optional)

For the sugar syrup:

  • 200 g of sugar
  • 100 ml of water
  • 1 tablespoon of orange blossom water
  • A few drops of lemon juice

Preparation Steps

  1. Preparing the filling:
    • In a bowl, mix the ground hazelnuts with the powdered sugar.
    • Add the orange blossom water and mix until you get a compact filling.
  2. Making the Samsa:
    • Cut the Samsa sheets lengthwise, choosing the width of the strip.
    • Place a spoonful of the filling at the edge of the strip.
    • Fold the corner of the strip to form a small triangle, then continue folding the rest of the strip in the same triangular shape until the end.
    • Brush the last fold with some beaten egg to seal it well.
  3. Cooking and coating:
    • Heat oil in a pan and fry the Samsa until golden. Drain on paper towels.
    • For the syrup: In a saucepan, heat the water and sugar until it starts to lightly boil. Add the lemon juice and orange blossom water, then let it thicken slightly.
    • Dip the Samsa into the warm syrup, then place them on a rack to drain.
    • Sprinkle with sesame seeds if desired.
