“Osh Bulbul”, literally meaning “the nightingale’s nest,” are delicious pastries with kunafa dough (angel hair pastry). They’re often shaped in special nest-like molds, then filled with nuts — usually pistachios or almonds — and drizzled with syrup.
These treats are crispy, golden, sweet to perfection… and perfect to serve during celebrations or with a nice cup of tea.

Ingredients

  • 20 Osh Bulbul Elgamra
  • 100 g melted butter
  • 200 g whole pistachios (or almonds, cashews, etc.)

For the syrup:

  • 200 g sugar
  • 120 ml water
  • 1 tsp lemon juice
  • 1 tbsp orange blossom water or rose water (optional)

Preparation Steps

  1. Make the syrup:
    • In a saucepan, bring the water and sugar to a boil.
    • Add the lemon juice and let it simmer for 8–10 minutes until it reaches a syrupy consistency.
    • Remove from heat and stir in the orange blossom or rose water (if using).
    • Let cool completely.
  2. Prepare the nests:
    • Generously coat each Osh Bulbul pastry with melted butter to fully soak them.
    • Repeat until all pieces are coated.
  3. Fill the nests:
    • Place 2 to 3 whole pistachios (or other nuts) in the center of each nest.
  4. Bake:
    • Preheat the oven to 180°C (350°F).
    • Bake the Osh Bulbul for 15 to 20 minutes until golden and crispy.
    • Once out of the oven, pour cold syrup over the hot pastries (about 1 tbsp per piece).
    • Let them cool.

These delightful treats are best enjoyed at room temperature, paired with Turkish coffee or mint tea.
