  • 10 sheets of Bourayk Elgamra brick pastry
  • 250 g peeled shrimp
  • 150 g grated cheese (Gruyère, mozzarella, or feta according to your taste)
  • 1 medium onion, finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon paprika
  • A pinch of sweet chili powder (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 egg (for glazing)
  • Oil for frying

Preparation Steps

  1. Prepare the filling:
    • Heat olive oil in a pan.
    • Add the onion and garlic, sauté until translucent.
    • Add the shrimp, paprika, sweet chili powder, salt, and pepper. Cook for 3-4 minutes.
    • Remove from heat, add the grated cheese and parsley. Mix well and let it cool.
  2. Prepare the bricks:
    • Place a spoonful of the filling in the center of a sheet of brick pastry.
    • Fold the sheet into a half-circle.
    • Brush the last fold with a little beaten egg to seal it properly.
  3. Cooking:
    • Heat a bit of oil in a pan.
    • Fry the bricks for about 2 minutes on each side until they are golden and crispy.
    • Drain on paper towels.
