Briks with eggs

for 8 persons -cooking ( 5 min ) preparation: 1h.

3 coffee cups of fine semolina- 1 coffee cup of butter- flower-almonds (150g)- pine -seeds (75g) -nuts (150g)- hazel nuts (160g) -a dry peel of crushed orange finely bent- 2 eggs -3 spoonfuls of water rose- orange- frying oil-a cup of caster sugar-1 lemon-pistachios (100g)

knead the semolina with butter by moistening just with enough water to amalgamate semolina. Leave to rest for an hour. Spread the pastry with a roller over a floury table, with the maximum of delicacy. Cut out squares . Hack up rudely dried fruits ,link them with whole eggs and moisten it with water rose. Garnish the squares with this pastry and close them up to obtain a triangular shape. Fry them broadly then drain. Apart from that do melt sugar with some lemon juice. When boiling is over ,throw away in it cakes and withdraw them quickly. Serve and sprinkle with crushed pistachios.
